In my produce box I got a bunch of carrots and LOTS of beets. I think those need to be roasted together. Possibly this way.

I won't do Mr. Oliver's beets and carrots though, they don't look as appealing as the honey balsamic recipe in the first link.
Oh - Mark says beets taste like dirt and are disgusting. I know Max wont' try them, but I'm interested in what Simon'll think of 'em.
